100% Sangiovese Wine “Fin di Bocca”
Sangiovese is grown on clayey soils, from which grapes are obtained well balanced at a polyphenolic and acidic level. The microclimate guarantees excellent maturation, at the same time giving complexity and completeness in terms of polyphenols, acidity and sugar content. The grapes are subject to a manual selection that allow only the best grapes to start fermentation; follow a gentle pressing and transfer to stainless steel tanks. Alcoholic fermentation takes place at a controlled temperature between 22° and 27° C in order to enhance the aromatic expression and preserve the fruity notes. At the end of fermentation the wine is transferred to large oak barrels and barriques, where it matures for about 12 months.
